English Muffin Breakfast Casserole

Maybe it’s an effect of the colder weather, but I find myself craving tasty comfort foods around the holiday time, and this English muffin breakfast casserole always hits the spot! It’s perfect for Christmas breakfast because you can make it the night before and pop it in the oven on Christmas morning for a quick and easy morning meal. This yummy casserole tastes just like your favorite breakfast sandwich, but it has a special ingredient that helps your body feel better, look better, and get the most from every day!

For my English muffin breakfast casserole, I used a few basic breakfast sandwich ingredients that my family loves to eat, but you can feel free to mix things up to suit your own taste preferences. I included bacon, sausage, cheddar cheese, and kale in our sandwiches, but spinach, mushrooms, and bell peppers would also be tasty additions.

To make my English muffin breakfast casserole, I started with a lightly greased 1.5-quart baking dish and five English muffins that were cut into eighths.

The English muffin pieces were layered with sausage, bacon, cheese, and kale until the entire dish was full.

I added salt, pepper, milk, and Vital Proteins Collagen Peptides to my eggs, and I whisked everything together with an electric whisk until it was light and frothy.

I poured the egg mixture over everything, covered it with foil, and let it sit for 20 minutes before baking. You could also refrigerate the dish overnight at this point, and it will be ready to be baked in the morning – perfect for Christmas breakfast!

English Muffin Breakfast Casserole

What You’ll Need:

  • 5 English Muffins, cut into 1/8ths
  • 8 strips Pre-Cooked Bacon, chopped
  • 8 Pre-Cooked Sausage Links, chopped
  • 1 cup Cheddar Cheese, shredded
  • 1 cup Kale, chopped
  • 8 Eggs
  • 1/3 cup Milk
  • 2 scoops Vital Proteins Collagen Peptides
  • Salt and Pepper to taste

Instructions:

  • Preheat oven to 325. 
  • Lightly grease a 1.5-quart baking dish and layer the dish with English muffin pieces, bacon, sausage, cheese, and kale. 
  • In a medium-sized bowl, whisk together eggs, milk, Vital Proteins Collagen Peptides, salt, and pepper. 
  • Pour the egg mixture over the English muffin mix in the baking pan. Cover with foil and allow to sit for 20 minutes or refrigerate immediately for baking in the morning. 
  • Bake covered for 25 minutes. Uncover and bake for an additional 15-20 minutes until the eggs have firmly set and the top is very lightly golden.
