Lunchtime is always a struggle for me. As a homeschooling family, we spend most of our lunchtimes at home, and lately we’ve had our fill of PBJ and deli sandwiches. The boys and I were all feeling a little burnt out on our usual fare, and I was starting to dread the thought of another boring turkey sandwich. Oscar Mayer must have been reading my mind because they just added four new flavors to their Deli Fresh Bold line that are packed full of bold spices and are anything but boring! Italian Style Herb Turkey Breast, Cajun Style Turkey Breast, Maple Honey Ham and Chipotle Season Chicken Breast are all at least 97 percent fat free and contain no artificial preservatives or flavors.
These new flavors inspired me to whip up a couple of new sandwich recipes that are quick and easy (aren’t most sandwiches? That’s why we love ’em!) and pack a big punch. My first creation was an Italian Style Turkey pita with roasted red pepper hummus and spinach.
What I used: Oscar Mayer Deli Fresh Bold Italian Style Herb Turkey Breast, garden herb pita pocket, sliced red peppers, spinach and roasted red pepper hummus. I used store bought hummus, but if you have the urge to make your own, Eat Drink Eat just posted a great recipe yesterday that packs a lemony kick that would work nicely in here. This combo of flavors was incredible, and I don’t think I’ve scarfed down my lunch that quickly in quite awhile!
I’ve mentioned before that my middle son is an egg fanatic, so when I saw the Deli Fresh Bold Maple Honey Ham I knew I had to use it to make him an awesome breakfast sandwich. Of course, he likes breakfast sandwiches for any meal, so this was actually a lunch for him 😉
What I used: Oscar Mayer Deli Fresh Bold Maple Honey Ham, whole wheat English muffin, 1 egg (scrambled with a splash of milk, a small handful of shredded spinach, salt and pepper), and spicy spread. To make the spicy spread, mix plain greek yogurt with sriracha hot sauce to taste.
