All of the children in our neighborhood are involved in recreational sports, and for as much as our kids love playing on their teams, by the end of the season they’re ready to have their weekends back (aren’t we all!?). This past Saturday marked the first weekend in a long time that our boys and all of their neighborhood friends didn’t have to be torn away from playtime and rushed off to their games. To celebrate, we threw an impromptu neighborhood party, and I made everyone a bunch of yummy sandwiches for lunch. We called it our Saturday Ultimate Sandwich Party, and it was a big hit!
I started with a twist on the basics – peanut butter & jelly (note: sunflower seed butter is a great alternative if you are nut-free). For the foundation of our sandwiches I used the new Oroweat® Organic breads – Premium White for our PB&Js and 100% Whole Wheat for the other sandwiches (also available in Grains & Seeds variety). With USDA-Certified Organic ingredients and whole grain varieties, these new breads are the delicious way to feel better about eating better.
I used my FunBites sandwich cutter to cut the peanut butter and jelly sandwiches into perfect little squares. Then I skewered the PBJ squares, grapes, strawberries and mozzarella cheese bites – voilà! PBJ Kabobs!
Simon was so excited to have everyone over for lunch, and he was even more excited to help me out in the kitchen. I think he ate most of his PBJ kabobs as he made them though!
The second sandwich that I made is my current favorite – apple cranberry chicken salad. I could eat this every single day and not get tired of it! This would also be delicious made with leftover Thanksgiving turkey instead of chicken. This recipe is easily adaptable, so feel free to adjust the amounts or substitute similar ingredients to your taste.
Start with 12-16 oz of cooked chicken (canned or fresh – shredded or finely chopped), and stir in 3 tbsp. of olive oil mayonnaise (or plain Greek yogurt). Add a dash of salt, pepper and salt-free seasoning to taste. Mix in 1 cup of finely chopped apples, 1/2 tsp. lemon juice, 1/4 cup dried cranberries and a few green onions.
YUM! Seriously, I could eat these all day, every day.
Our third and final sandwich is a favorite of my husband and our boys, so it’s one that we knew our friends would love, too. I layered the Oroweat Organic bread with turkey, cheddar cheese, ham, colby jack cheese, cucumbers, lettuce and bacon – crazy delicious! A few quick washi tape flags on the sandwich picks made our table look festive and party-like.
The kids had a blast eating lunch with all of their friends, and I think we may have just started a new end-of-sports-season tradition!
…and I’m pretty sure that Simon is going to be requesting PBJ kabobs for lunch every day from now on!
