Vanilla Berry Chai Breakfast Cookies

Loaded with healthy ingredients, these vanilla berry chai breakfast cookies are the perfect on-the-go meal, and they make a great treat for brunches & tea parties! 

New and Improved Lipton TeasI have been drinking tea since I was old enough to hold a cup, and I have at least one cup each day. What can I say? I love, love, love tea, so I was really excited to try some of the new and improved flavors by Lipton. I decided to host a girls’ brunch so that my friends could also experience the uplifting and refreshing flavors of new Berry Hibiscus, Irresistible Lady Lipton, and Enticing Chai along with the improved flavors of Lipton’s Honey Lemon and Orange Passionfruit Jasmine green teas.

Vanilla Chai Breakfast Cookies with BerriesAs soon as I tasted the new Enticing Chai tea, I knew that it was going to one of those incredibly versatile flavors that I would enjoy again and again. In fact, I immediately brewed a second cup to use in my favorite breakfast cookie recipe! These cookies are packed full of good-for-you ingredients that keep you feeling full all morning long, and they’re perfect for brunches and tea parties. I whipped up a batch for our brunch tea, and they were gone within minutes!

What You'll Need:

  • ¼ cup Coconut Oil, melted
  • ¼ cup Honey
  • ¼ cup Agave
  • 1 cup Rolled Oats
  • ½ cup Quick Cooking Oats
  • ¾ cup Almond Flour
  • ¼ cup Applesauce
  • ½ cup Lipton Enticing Chai tea, strongly brewed
  • 2 2 Eggs, beaten
  • 1 tbsp. Vanilla
  • ½ cup Dried Cranberries
  • ½ cup Fresh Blueberries
  • ¼ cup Pumpkin Seeds
  • ¼ cup Ground Flax Seeds
  • ½ tsp Chia Seeds
  • ½ tsp Cinnamon
  • 1 tsp Salt

Instructions:

  • Preheat oven to 325 F. Line a baking sheet with parchment paper.
  • In a small bowl, melt coconut oil in the microwave (or in a small saucepan over low heat on the stovetop). When melted, add honey, agave, eggs, and vanilla - mix well.
  • In a large bowl combine both kinds of oats, almond flour, cranberries, blueberries, pumpkin seeds, flax, chia seeds, cinnamon and salt.
  • Add applesauce, chai tea, and wet ingredient mixture. Stir until fully combined.
  • Drop ¼ cup sized scoops of the mixture onto a cookie sheet and flatten (cookies won't spread while baking).
  • Bake for about 15-20 minutes until edges are lightly browned.
  • Let cookies cool on baking sheet before moving to an airtight storage container.

Lipton Berry Hibiscus Herbal TeaI can’t get over how gorgeous the color of this Berry Hibiscus herbal tea is, and it’s even more bold and vibrant in person! I was worried that the hibiscus flavor might be too floraly for my taste, but it was the perfect counterpart to the rich berry flavor. It smells amazing too!

Lipton Orange Passionfruit Jasmine Green Tea & Chai Breakfast CookiesI love many green teas, but this improved variety of Orange Passionfruit Jasmine is definitely at the top of my favorites list. It’s another one that smells incredible (it reminds me of the spring-blooming jasmine bushes and orange trees that grew in my grandmother’s backyard!), and it has a light, fresh taste, and bright color. This one was wildly popular with the ladies at brunch!

The Enticing Chai was a great addition to my standard recipe, and I plan on making a batch with the Berry Hibiscus tea next time. I’m sure they’ll be delicious, too!
