1tbspVanilla Extract + Seeds/Paste from 3 Vanilla Beans
Juice of 1/2 Lemon
3 1/2cupsGluten-Free Flour(I use Cup4Cup brand)

Instructions
Cream together butter and Sugar In The Raw Organic White in a chilled mixing bowl. Add one egg, vanilla extract, vanilla bean, and lemon juice, and mix well.
In a second bowl, combine gluten-free flour and salt.
Mix the dry ingredients into the wet ingredients, and stir until well combined.
Roll out the dough between two sheets of parchment paper until it is approximately 1/4" thick.
Use a cookie cutter (mine are from Williams-Sonoma - newer version) to cut the cookie shapes. Trim excess dough, and place cookies on to a parchment lined baking sheet.
Bake at 350 degrees for 12-14 minutes until edges are lightly golden.
