Cranberry Apple Chicken Salad in Cucumber Cups

  • 2 Cans Hormel Chunk Chicken Breast
  • 1 Medium Apple, finely diced
  • 1/3 Cup Slivered Almonds
  • 1/2 Cup Dried Cranberries
  • 2 Large Cucumbers
  • 1 tsp. Mrs. Dash Original Salt-Free Seasoning Blend
  • 1/3 Cup Olive Oil Mayonnaise, more or less to taste
  • Salt & Pepper to taste


  1. In a large bowl, combine Hormel Chunk Chicken, apple, almonds, cranberries, mayonnaise, Mrs. Dash seasoning blend, salt and pepper. Mix until combined well.
  2. Slice the cucumber into 1" thick slices, and use a melon baller to hollow out the center to create a cucumber cup.
  3. Fill the cucumber cup with the chicken salad mixture, and garnish with a thin slice of apple.
  4. Keep refrigerated and serve chilled.
