Cranberry Almond Energy Bites


  • 1 cup Rolled Oats
  • 1/3 cup Almonds sliced and roasted
  • 1/2 cup Almond Butter
  • 1/4 cup Honey
  • 1/2 cup Unsweetened Coconut shredded or flaked
  • 1 tbsp. Flax Meal
  • 1 tbsp. Chia Seeds
  • 1/3 cup Dried Cranberries
  • 1/2 tsp. Cinnamon
  • 3 scoops Vital Proteins Collagen Peptides optional
  • up to 2 tbsp. Water if needed


  • Place all ingredients except water into the bowl of a food processor (alternately, you can mix all ingredients by hand. If you mix by hand, roughly chop the cranberries into smaller pieces before mixing), and pulse until the mixture forms a crumbly dough.
  • Use a cookie scoop to shape and portion the energy bites.
  • Note: if the dough does not hold together when formed into balls, add up to 2 tbsp. of water as needed until they hold their shape.
  • Store in an airtight container in the refrigerator for one week or in the freezer for up to 3 months.
