Ingredients
Donuts:
1 1/2cupsApple Cider
2 cupsCake Flour
2tspBaking Powder
1 1/2tspCinnamon
1/4tspNutmeg
1tspSalt
1/2cupMilk
1/2cupBrown Sugar, packed
1/4cupGranulated White Sugar
1 largeEgg
2TbspButter, melted
2tspVanilla Extract
Topping:
1/2 cupGranulated White Sugar
2 tspCinnamon
5Tbsp Butter, melted
Instructions
To Make the Donuts:
In a small saucepot, bring the apple cider to a boil over high heat, then reduce heat to a simmer. Allow the cider to reduce to 1/2 cup (this will take about 10-15 minutes). Allow to cool.
Preheat the oven to 375 degrees F and grease the donut pan with cooking spray.
In a large mixing bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
Whisk together the milk, brown sugar, sugar, egg, butter, and vanilla in a medium-sized mixing bowl.
Pour the wet ingredients into the dry ingredients and stir until combined.
Pour the batter into a large plastic zipper bag, and cut off about 1/2" at the corner. Pipe the batter into the baking pan so that each well is about half full.
Bake for 8-10 minutes until they are cooked through and a toothpick inserted into the center comes out clean. Cool on a cooling rack.
For the Cinnamon Sugar Topping:
In a medium mixing bowl, combine the sugar and cinnamon.
Brush the donuts with the butter (one at a time), making sure to coat both sides, before dipping the donut into the cinnamon mixture until it is well coated.
Notes
Feel free to add your favorite mix-ins as desired - we like to add things like chopped apple pieces (about 1 cup), golden raisins or Craisins (1/2 cup), walnuts or other chopped nuts (1/2 cup) to our apple cider donuts to add even more layers of flavor!
