This easy St. Patrick’s Day bark recipe is so fun and festive! Makes a great treat for kids classroom parties or for your own holiday dessert!

12Large Graham Crackers
40Large Marshmallows
1/4cupUnsalted ButterMelted
8OuncesSemi-sweet Baker's Chocolate,broken into squares

Instructions
Start by lining a 9.5” x 13” baking sheet with parchment paper.Lay graham crackers in a flat layer on a baking sheet. (You may need to trim some so they all fit in a single layer on the baking sheet!)
In a large microwave-safe bowl, toss marshmallows with melted butter so all marshmallows are coated in butter. Heat in microwave (high heat) for 1 minute then remove from microwave and stir well. If marshmallows aren’t all melted, return bowl to microwave for another 30 seconds and stir well again.Using a spatula coated in non-stick cooking spray, spread melted marshmallows in an even layer over top of the graham crackers.
In a small microwave safe bowl, heat chocolate for 1 minute on high heat. Remove from microwave and stir well. If chocolate is not all melted, remove from microwave and continue to heat in 30-second intervals (stirring well after each 30 seconds) until fully melted.
Use a spatula to spread melted chocolate evenly over marshmallow layer.
While the chocolate is still melted, sprinkle candies on top of your chocolate.Place the baking tray in the fridge for 30 minutes to chill so the chocolate can harden.
Remove from the fridge and use a sharp knife to cut bark into pieces. An easy way to cut your leprechaun chocolate bark is by coating your knife in non-stick cooking spray!
Store chocolate bark in a sealed airtight container at room temperature for up to a week! If it is warm in the house, store in fridge so chocolate doesn’t melt. Note that the marshmallow mixture will be very sticky to work with so non-stick cooking spray is essential! Use as much as you need on the spatula and your hands.
