Quick & Easy Fiesta Chicken Taco Salad
Large Head of Green Leaf or 2 Heads of Romaine Lettuce
grilled and seasoned with taco seasoning
Ro*Tel Tomatoes with Chilies,
Seasoned Black Beans,
drained and lightly rinsed
Sweet Golden Corn,
Shredded Mexican Blend Cheese for Topping
Tri-Colored Tortilla Strips for Topping
Tear or shred the lettuce into bite sized pieces, and place into a large serving bowl.
Open, drain and rinse the canned goods.
Chop the chicken breasts into bite sized pieces.
Top the lettuce with black beans, corn, and chicken.
Add a scoop of Ro*Tel on top and garnish with shredded cheese and tri-colored tortilla strips.
