Lemon Skillet Haddock
Ingredients
1
lb.
Fresh Wild Caught Haddock
Zest from 1 Small Lemon
3
tbsp.
Avocado or Olive Oil
½
cup
Bread Crumbs
Sliced Cherry Tomatoes and Radish,
optional
Sea Salt & Pepper
to taste
Instructions
Preheat the oven to 400 degrees.
Add the avocado oil to the bottom of the pan along with the salt, pepper and lemon zest.
Place the haddock pieces into the pan, coating both sides.
Sprinkle the bread crumbs across the top of the fish.
Add the tomatoes and radish slices on top (use a peeler to slice it super thin) if desired.
Bake for about 9 to 12 minutes or until solid white and flaky.
Note: final cook time will depend on how thick your pieces of fish are.
