Start by combining the dry ingredients together. Stir in the flour, sugar, baking powder, and salt. Next, add in the wet ingredients. Mix in the milk, melted butter, and eggs.
Use a wire whisk to mix these ingredients until fully combined.
Then, add in the colorful Fruity Pebbles into the pancake batter.
Prepare your large non-stick skillet, or griddle by heating to medium heat. Grease it with spray oil or a bit of butter. Using a ¼ measuring cup, ladle batter and place onto your skillet or griddle. Repeat for however many pancakes will fit without touching each other in your pan. Cook until the surface of the pancakes start to bubble, about 1-2 minutes. Flip the pancakes and cook the other side 1-2 minutes. Remove from pan and keep warm on a separate baking sheet while you repeat the cooking process with the rest of the batter.
Once you’ve finished cooking the batter, you can prepare the marshmallow fluff for topping your stack of pancakes.Place the marshmallow fluff into a medium or large microwave safe bowl.Microwave for 15-20 seconds and stir. You may need to microwave a bit more to get it to a drizzable consistency. To be safe, microwave in a larger bowl and keep your eye on it in the microwave as the fluff will expand greatly when heating up.
Spoon the marshmallow fluff over your pancakes and serve! You can add a few extra Fruity Pebbles cereal on top of the marshmallow fluff for a BIG fruity taste and texture. Store any leftover pancakes in an air-tight container in the fridge for up to one week!
Notes
NOTE: If you don’t want to use Marshmallow Fluff as your topping, you can substitute this item for any other tasty topping. Syrup, fruit jams or whipped cream all make great alternatives!
