This easy-to-make breakfast treat is the perfect way to relax, and enjoy some weekend morning fun with the whole family!

If you’re like me, you might tend to avoid making a big breakfast because it means having to wake up early and spend time preparing foods that will typically be devoured in just minutes (at least in my household – I have three teenage boys!)!

With the help of this fun recipe and my favorite mini skillet, I can serve up the tastiest, fluffiest pancakes in no time! Topped with yummy Marshmallow Fluff and made with Fruity Pebbles cereal bits, this pancake recipe is a total knockout! Since we started making this recipe, my kids are now begging for it every weekend. We’ve even tried substituting the Fruity Pebbles for even more of our favorite cereals. It’s such a hit!

They’re a great addition to birthday morning celebrations, brunch options, or to make just for fun! I’ve also been making them into cute little mini-pancakes; they’re the perfect grab-and-go breakfast idea for kids. They’re so fun and colorful, and they’d make a great addition to a breakfast charcuterie board spread!

Without further ado, let’s get started making your next favorite breakfast option!


How to Make Fruity Pebbles Pancakes:

Start by combining the dry ingredients together. Stir in the flour, sugar, baking powder, and salt. 

Next, add in the wet ingredients. Mix in the milk, melted butter, and eggs.

Use a wire whisk to mix these ingredients until fully combined.

Then, add in the colorful Fruity Pebbles into the pancake batter.

Prepare your large skillet, or griddle by heating to medium heat. Grease it with spray oil or a bit of butter

Using a ¼ measuring cup, ladle batter and place onto your skillet or griddle.  Repeat for however many pancakes will fit without touching each other in your pan. 

Cook until the surface of the pancakes start to bubble, about 1-2 minutes. 

Flip the pancakes and cook the other side for 1-2 minutes.  

 Remove from pan and keep warm on a separate baking sheet while you repeat the cooking process with the rest of the batter.

Once you’ve finished cooking the batter, you can prepare the marshmallow fluff for topping your stack of pancakes.

Place the marshmallow fluff into a medium or large microwave safe bowl.

Microwave for 15-20 seconds and stir.  You may need to microwave it a bit more to get it to a drizzle-able consistency. To be safe, microwave in a larger bowl and keep your eye on it in the microwave as the fluff will expand greatly when heating up.

Spoon the marshmallow fluff over your pancakes and serve! You can add a few extra Fruity Pebbles cereal on top of the marshmallow fluff for a BIG fruity taste and texture. Store any leftover pancakes in an air-tight container in the fridge for up to one week!

How Can I Keep The Fruity Pebbles Cereal From Being Soggy?

Add the cereal into your batter mixture a bit at a time so that they aren’t soaked in the batter for a very long time. Once you’ve mixed them in, make sure to cook that batch right away. Perfection!

How Can I Get Perfectly Round Pancakes Every Time?

What Alternative Ingredients Can I Use?

If you’re not a big fan of marshmallow fluff, you can use Mrs. Butterworth’s maple syrup or other flavored syrup. Fruit jams are also a tasty topping alternative, as is vanilla frosting. You can also replace Fruity Pebbles with Cocoa Pebbles, Fruit Loops, or another favorite cereal brand!

Can I Eat This If I’m On A Gluten-Free Diet?

Most of the ingredients in our recipe are naturally gluten-free, like butter, marshmallow fluff, and even the Fruity Pebbles! The main ingredient you need to be careful with is the all-purpose flour. Since many all-purpose flours have wheat in them, you’ll need to find a gluten-free alternative like 1:1 gluten-free flour, or you could experiment with using oat flour or almond flour.

How Do I Make These Pancakes Extra Colorful?

If you’re looking for a real pop of color, then we recommend adding some extra Fruity Pebbles on top while they’re cooking. They look so cheery and colorful!
