First, preheat your oven to 350 degrees Farenheit.

Spray a 9” round cake pan with non-stick baking spray and line the bottom of the pan with parchment paper.

In a large bowl, beat together butter, brown sugar and granulated sugar until creamed well (about 2 minutes!).

Next, add the egg and vanilla into the butter mixture and beat until fully incorporated (about 30 seconds!).

In a separate bowl, stir together your dry ingredients – flour, baking soda, cornstarch and salt. 

Add the flour mixture into the wet ingredients and beat just until flour is combined. Do not overmix!

Now, begin stirring in the chocolate chips.

NOTE*Do not use the electric mixer for this step!

Place cookie cake batter into the prepared cake pan and spread in an even layer.

The easiest way to avoid batter from sticking to the spatula is to spray the spatula with a bit of non-stick baking spray so you can spread the batter evenly.

Bake in the oven for 28 to 30 minutes. The top should be a light golden brown, and the middle may sink slightly – this is normal!

Let the cake cool down in the prepared pan for 20 minutes before removing it.


How to Make Ganache Frosting

Gather your heavy whipping cream and chocolate chip ingredients to start making the ganache.

To start, heat the heavy cream in a medium bowl in the microwave until boiling (about 1 minute), then immediately pour in the chocolate chips. Let the mixture sit for 5 minutes before stirring.

Let the ganache chill in the fridge for 30 minutes before pouring over your cookie cake.   

NOTE – It’s important to let the ganache chill in the fridge for 30 minutes before adding to the cake and topping or else the chocolate bars will melt!
